Instructions

  1. Prepare the Steak:
    • Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
    • Pat it dry with a paper towel.
    • Season both sides generously with salt and pepper.
  2. Choose Your Pan:
    • Use a cast-iron skillet or a heavy-bottomed pan for even heat distribution.
  3. Heat the Pan:
    • Heat the skillet over medium-high heat until it’s very hot. Add a tablespoon of olive oil or a knob of butter.
  4. Cook the Steak:
    • Place the steak in the pan. It should sizzle immediately.
    • For doneness:
      • Rare: 2 minutes per side
      • Medium-rare: 3-4 minutes per side
      • Medium: 4-5 minutes per side
      • Well-done: 6-7 minutes per side
        Adjust the time based on the thickness of your steak.
  5. Add Flavor (Optional):
    • During the last minute of cooking, add a clove of crushed garlic and a sprig of rosemary or thyme to the pan.
    • Baste the steak with the melted butter and herbs using a spoon.
  6. Rest the Steak:
    • Remove the steak from the pan and let it rest on a plate for 5-10 minutes. This helps the juices redistribute.
  7. Serve:
    • Slice against the grain for tenderness and serve with your favorite sides (like mashed potatoes, salad, or grilled veggies).
