Instructions
- Prepare the Steak:
- Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
- Pat it dry with a paper towel.
- Season both sides generously with salt and pepper.
- Choose Your Pan:
- Use a cast-iron skillet or a heavy-bottomed pan for even heat distribution.
- Heat the Pan:
- Heat the skillet over medium-high heat until it’s very hot. Add a tablespoon of olive oil or a knob of butter.
- Cook the Steak:
- Place the steak in the pan. It should sizzle immediately.
- For doneness:
- Rare: 2 minutes per side
- Medium-rare: 3-4 minutes per side
- Medium: 4-5 minutes per side
- Well-done: 6-7 minutes per side
Adjust the time based on the thickness of your steak.
- Add Flavor (Optional):
- During the last minute of cooking, add a clove of crushed garlic and a sprig of rosemary or thyme to the pan.
- Baste the steak with the melted butter and herbs using a spoon.
- Rest the Steak:
- Remove the steak from the pan and let it rest on a plate for 5-10 minutes. This helps the juices redistribute.
- Serve:
- Slice against the grain for tenderness and serve with your favorite sides (like mashed potatoes, salad, or grilled veggies).
